Light & easy chicken meatloaf

A simple meatloaf which takes 10 minutes to prep. Put it in the oven and in just over 60 minutes you have a delicious meal. Save some for leftovers as cold meatloaf is the best.

The use of chicken mince is a nice lighter alternative to the usual beef meatloaf.

Ingredients: 

  • ½ c. freshly grated cheese
  • ½ c. plain dried breadcrumbs
  • 1 large egg
  • 3/4 c. tomato/pasta sauce
  • 900g chicken mince
Method:Preheat oven to 200C. Line a metal loaf tin with foil. Spray foil with nonstick cooking spray.In a large bowl, stir the cheese, bread crumbs, egg, 1/2 cup tomato sauce, and 1/2 teaspoon salt. Add chicken and mix just until combined.Spoon chicken mixture into center of prepared pan; shape into 20cm by 10cm loaf, pressing firmly. Spread remaining 1/4 cup tomato sauce over top.Bake meatloaf for 65 minutes then let stand for 10 minutes for easier slicing.

Serve hot or cold.
