Red Wine and Pear Cake

This is an impressive dessert when served with some whipped cream and the reduced poaching syrup drizzled on top, or a formidable tea cake, best accompanied by a shot of grappa.

Mediterranean Poached Fish

The literal translation of this dish is ‘fish in mad water’, the madness being a delectable tomato, wine and olive oil broth that gently poaches white fish fillets.
