Spinach Pasta

 

This spinach pasta recipe is so delicious and easy! Full of vitamins, and protein, its a greta way to get everyone eating their greens. The green sauce is also great served on a platter with plenty of crackers and cheese.

 

Serves: 4

  • 450 g pasta
  • ¼ cup walnuts
  • 2 cloves garlic
  • 3 cups of spinach lightly blanched
  • ⅓ cup olive oil
  • ¼ cup grated Parmesan
  • ¼ tsp of each salt and black pepper
  • 1 tablespoon grated lemon zest

Instructions

  • Cook the pasta al dente
  • Drain and return it to the pot.
  • In a food processor or blender, pulse the walnuts and garlic until chopped.
  • Add the spinach, oil, Parmesan and salt and pepper.
  • Puree until smooth
  • Add the pesto to the pasta and toss to combine, add extra olive oil if dry

Sprinkle with the lemon zest and Parmesan before serving.
