This spinach pasta recipe is so quick and delicious! Full of vitamins and protein, it’s a great way to get everyone eating their greens. The green sauce is also great served on a platter with plenty of crackers and cheese.
Serves: 4
Ingredients
- 450g pasta
- ¼ cup walnuts
- 2 cloves garlic
- 3 cups of spinach
- ⅓ cup olive oil
- ¼ cup grated Parmesan
- ¼ tsp of each salt and black pepper
- 1 tablespoon grated lemon zest
Method
Cook the pasta until al dente. Drain and return it to the pot.
In a food processor or blender, pulse the walnuts and garlic until chopped. Add the spinach, oil, Parmesan and salt and pepper. Puree until smooth
Add the pesto to the pasta and toss to combine, add extra olive oil if dry
Sprinkle with the lemon zest and Parmesan before serving.
TIP: Cooking for fewer than four? Make the full batch of sauce and just cook the amount of pasta you need. Store the leftover sauce in the fridge and use it the next night—simply cook a fresh batch of pasta and stir through the sauce, warming it slightly if needed.
