Spinach and Feta Tart

This easy spinach and feta pie is a deliciously simple dish that’s perfect for any meal of the day. With crisp, golden puff pastry and a rich, savoury filling, it’s packed with flavour yet requires minimal effort. Serve it warm for a comforting lunch or enjoy it cold for a fuss-free picnic treat.

Spinach and Feta TartIngredients

  • 4 large eggs
  • 1 cup milk
  • 1/2 cup feta, crumbled
  • ½ small onion thinly sliced
  • 1 clove garlic minced
  • 1 cup fresh spinach (uncooked), chopped
  • Olive oil
  • Puff pastry
  • Salt and pepper to taste

Method

1.    Preheat oven to 190 degrees celsius.

2.    Line a pie dish with puff pastry and add half of the feta. Put aside.

3.    Sauté the onion in olive oil on medium/low heat until translucent and soft.

4.    Add the garlic and sauté for one minute.

5.    Add the spinach and sauté until wilted and place this mixture into the pie shell, on top of the feta.

6.    In a mixing bowl beat together the eggs and milk. Add salt and pepper to taste.

7.    Add the egg mixture to the pie shell and top with the remainder of the feta

8.    Bake for 45 minutes or until a pick inserted in the centre comes out clean. The top should be lightly browned. Allow to cool for at least 10 minutes.
