One-Pot Sausages with Fennel, Pear and Marmalade

Marmalade fennel and pear sausages

Cheap and cheerful sausages, one dish to wash, and packed full of flavour, what’s not to love! If you want to add something extra, you could pop some beans on the side or roast potatoes.

INGREDIENTS

  • 1 1/2 tbs extra virgin olive oil
  • 12 sausages (we used pork)
  • 150g marmalade, warmed
  • 110ml apple cider
  • 1 large fennel bulb (or 2 red onions), cut into wedges (save the fennel fronds to serve)
  • 3 pears, cut into wedges
  • 1 tbs wholegrain mustard
  • 1 garlic bulb, halved crossways
  • Salt and pepper to taste
  • Sliced gherkins or pickled cucumbers, to serve
  • Fennel fronds (or dill), to serve

METHOD

  1. Preheat oven to 220˚C and grease a large baking tray.
  2. Toss oil, sausages, marmalade, cider, fennel, pear, mustard, garlic, salt and a pinch of ground black pepper on prepared tray. Spread over tray and roast for 20-25 minutes or until sausages are cooked.
  3. Bast 3 times with cooking juices while roasting.
  4. Serve with gherkins and fennel fronds sprinkled on top.
