Tastes as good as it sounds.
- 4 large potatoes
- 4 tablespoons oil
- 2 large onions
- 1 tablespoon honey
- 1/2 teaspoon black pepper
- 1 cup water
- 1/2 cup chopped spring onions
- 6 rasher bacon
- 2 teaspoons salt
- 2 tablespoons flour
- 1 teaspoon grainy mustard
- 1/2 cup white vinegar
Boil the potatoes in salted water until the potatoes are tender but still firm.
While the potatoes are cooking, prepare bacon, onions and dressing.
Heat the oil in a frying pan and cook bacon until crisp. Lift out and drain, let it cool and crumble into the dish.
Chop the onions and cook in frying pan. Cook until onion is clear.
Combine flour, honey, salt, pepper, mustard, water and vinegar together. Stir into frypan. With onion and cook until it thickens (You may need to add extra water).
Cut potatoes into cubes and place in the serving dish. Sprinkle with chopped onions and pour potato mixture.
Stir and serve hot.
