Hokey pokey biscuits

World famous in New Zealand, these biscuits come highly recommended by the GrownUps community as one of their favourite recipes from the Edmonds cookbook.

Ingredients:

  • 125 g butter
  • 1⁄2 cup caster sugar
  • 1 tablespoon golden syrup
  • 1 tablespoon milk
  • 11⁄2 cups Edmonds standard grade flour
  • 1 teaspoon Edmonds baking soda

Method:

Preheat the oven to 180°C. Grease an oven tray.

Place the butter, sugar, golden syrup and milk in a saucepan. Stir over a low heat until the butter has melted. Increase the heat and continue stirring until the mixture almost bubbles.

Remove the saucepan from the heat and allow the mixture to cool.

Sift the flour and baking soda into a bowl. Stir the flour into the butter mixture. Mix well.

Take tablespoons of the mixture and roll into balls. Place on the oven tray.

Flatten the biscuits slightly with
a floured fork. Bake for 15–20 minutes or until golden. Transfer to a wire rack to cool.
