Fruit salad for GrownUps: Watermelon slice liquor jelly

This beautiful dessert is refreshing and has no added sugar. Slice and serve it at your next party or bbq.

Ingredients:

  • 1 medium watermelon
  • 2 1/2 – 3 cups of sliced fruit such as melon, oranges, berries, dragonfruit or grapes
  • 1/4 cup rum or liqueur optional
  • 1 1/2 cup cold water
  • 3 tablespoons unflavored gelatin3/4 ounce
  • 1 1/2 cup boiling water

Method:

Slice watermelon in half lengthwise with a sharp knife. Pick one half and cut ¼-inch off the bottom if needed for balance.

Remove watermelon from selected half with a spoon or scoop.

Put the fruit in a bowl and mix together. Add to watermelon half along with optional rum/liqueur.

In a medium bowl, add cold water and sprinkle gelatin on top. Then add boiling water and whisk for two minutes until dissolved.

Pour gelatin water into the watermelon until it almost reaches the top. Refrigerate for at least 5 hours to set fully.

With a sharp knife, slice watermelon lengthwise and then into 1-inch wedges. Serve and enjoy!

Note: avoid using kiwifruit or pineapple which may affect gelatin setting
