Our favourite spring recipes from nz local Chelsea Winter

Inspired recipes? Check. Gorgeous smile? Check. Fun sense of humour? Check. Is there anything not to love about MasterChef New Zealand winner Chelsea Winter? We think not.

for-web-1024x682What we really adore about this homegrown Kiwi girl is the fact that her recipes are all surprisingly easy. She writes and tests each one in her own kitchen, and only uses everyday ingredients that are easy to find at the local supermarket. This means you won’t find any OTT creations calling for “vanilla mushroom protein powder” or “ashwagandha” herbs. Ahem, Gwyneth Paltrow. Just simple, honest, everyday ingredients that we all know and love.

So, what’s on our wish list this spring?

Thai Pumpkin Soup

Summer may be on its way but that doesn’t mean NZ is quite done with its blustery weather. When the rain rolls in this Thai Pumpkin Soup is an absolute lifesaver. Pick up some pumpkins from your local farmers market or co-op and you’ll be laughing.

Salted Caramel & Cashew Slice

Is there anything better than an afternoon cuppa accompanied by a sweet treat? Didn’t think so. This wonderfully gooey slice is surprisingly easy to make, and will definitely get the grandkids seal of approval.

Coconut Porridge

Spring mornings can be a little crisp so why not warm up with this lusciously creamy coconut porridge? It’s dairy and (almost) sugar free, and packed full of goodness like bran and apple for fibre, LSA for good oils, and chia seeds for protein.

Greek Style Fish Salad

Fresh and zesty, this salad is just what you need on a sunny spring weekend. The vibrant dish is bursting with Mediterranean flavours and while the sumac (a tangy, lemony spice) is optional, but we highly recommend!

Lebanese Style Meatballs

With the creamy yogurt dressing, juicy meatballs and wonderfully soft flatbread, this Lebanese inspired dish is guaranteed to be a hit. Plus, it’s oh so easy to make in bulk which makes it great if you’re hosting a family lunch.

Let’s just say we’re pretty excited about her promises of nourishing, family-friendly dinners, a ‘slow’ section packed full of warming winter meals and drool worthy desserts like Orange Chocolate Sherbet Slice, Choc-hazelnut Cheesecake and Tuck-Shop Donuts.
