Empty the Fridge Pie

On the day before shopping day, when the fridge is looking a little bare, (save for various odds and sods) there is still culinary magic to be made. Dig out your leftovers, add some milk, eggs and cheese, and hey presto – impossible pie is served!

You can add any variation of flavours you like, so use your imagination.

Start with:

  • 2 cups milk
  • 4 eggs
  • 90g butter, melted
  • 1/2 cup plain flour
  • 1 cup grated tasty cheese
  • 2 spring onions, chopped
  • 1 tbsp chopped parsley

Then add: 

  • 1/2 cup chopped ham/chicken or similar
  • 1/2 cup leafy greens, fresh or frozen (thaw if using frozen)
  • 1/2 cup chopped capsicum/mushrooms/courgettes

Method:

Preheat your oven to oven 180°C and lightly grease a deep, 25cm pie plate.

In a large jug, whisk together milk, eggs and butter; season to taste. Sift the flour into a large bowl. Make a well in the centre and gradually whisk in the milk mixture.

Mix in 1/2 cup cheese, protein, greens, other veges, spring onion and parsley.

Spoon mixture into prepared pie plate. Sprinkle with remaining grated cheese; bake 45-50 minutes, until firm. Serve in wedges with salad.
