Classic kiwi cheese rolls

A true Southern classic, growing up in the South you would have had these many times over the years. North Islanders, this is something you must try. In my opinion, they taste particularly good with tomato soup.

Make a big batch and freeze them so you can defrost and toast them as needed.

  • 1/2 cup boiling water
  • 1 packet onion soup mix approximately 30g
  • 1/4 small red onion
  • 2 1/2 cups grated cheese
  • 20 slices sandwich bread (we used brown, however, white bread is traditionally used)
  • 25g butter
Method:
Place boiling water, onion soup, onion and grated cheese in a small saucepan and melt very gently over a low heat
Spread cheese mixture on bread slices and roll tightly. Place rolls on a cold tray.
Cook under a hot grill until golden, turning during cooking to get an even colour.
Dot with butter and serve.
