for 4 servings”
300g large macaroni shapes
1 Tbsp butter
1Tbsp flour
425 Italian tomatoes,cooked mushrooms,corn or other vegetables (optional)
1cup grated cheese
2 eggs
1cup milk
cook e the macaroni in plenty of lightly salted boiling water until tender, then drain and stir through the butter,flour and tomatoes. Stir in additional vegetables if you like and spread in a 20-24cm ovenware sish,smoothing so that it is neatly compacted and level. Sprinkle evenly with grated cheese,beat the eggs and milk to blend, then pour over the pasta and cheese mixture. Bake uncovered at 180c for 30 -40 mins or until the cheesy topping is firm in the centre. allow to stand 5-10 mins before serving
serve with broccoli,beans, a green salad or coleslaw
