Berry smoothie with hidden lentils

Lentils are a power food and have the same protein as steak. 100gms of lentils will also give you 72% of your daily fibre needs and 50% of the recommended daily folate.

You won’t taste or feel the texture of the lentils in this smoothie but the addition of them will keep you feeling fuller for longer.

Ingredients:

  • 1 cup frozen mixed berries
  • 1/2 cup plain yogurt
  • 1/4 cup cooked split red lentils*
  • 1/8 cup orange juice
  • 3 mint leaves
  • 1/2 Tbsp maple syrup
  • 1/4 tsp turmeric

Directions

Combine all ingredients in a blender. Blend until very smooth. Pour into four glasses and serve immediately.

*1 cup of dry lentils will make about 2 1/2 cups cooked lentils. We used 1/8 cup lentils and cooked them for 10 minutes with 1/8 cup + 1 Tbps water.
