Egg Sandwich Mexicana (Vegetarian)

Great as an after school (work) snack.

Ingredients:

  • 4 coarse-chopped hard boiled eggs
  • 2 tablespoons each chopped green pepper, pimiento, stuffed olives, and scallions
  • 1/2 cup grated cheese
  • 1/4 cup chilli sauce
  • 1/3 teaspoon salt
  • 1/4 teaspoon chilli powder
  • 1/4 teaspoon pepper
  • 4 large rolls
  • Margarine

Method:

Combine all ingredients except the butter and rolls.

Hollow out the soft interior; brush with the melted margarine.

Heap in egg mixture. Place on a baking sheet in a hot oven until the cheese starts to melt and the edges are delicatly browned.
