Impossible pie, crustless frittata or empty your fridge quiche. This dish has many names and aliases but in all shapes and forms, it is effortless to make and such a satisfying and inexpensive meal.
Below is a basic recipe which you can switch up with the vegetables you have in the fridge or leftover meats such as chicken or ham.
Ingredients:
- 1 Onion chopped finely
- 1 tbsp Butter
- 1/2 cup shredded leftover roast chicken
- 3/4 cup Flour (Plain)
- 1 cup Vegetables grated carrot and zucchini, corn, chopped capsicum and leftover potatoes – anything you like!
- 2 cups Milk
- 4 Eggs
- 2 tbsp fresh or dried herbs such as basil or oregano
- 1/2 cup Cheese grated
Method:
Preheat oven to 180 degrees. Place butter in frying pan and add diced onion stir until browned. Add the onion and chicken to the flour and stir through the grated/chopped vegetables and herbs.
Whisk eggs and milk together, mix together with flour and veggie mix, season if desired. Pour into a greased pie dish and top with cheese.
Bake until golden and set (about 30 minutes). Serve hot.
Serve hot or cold with relish and a side salad.
