Savoury impossible pie

Impossible pie, crustless frittata or empty your fridge quiche. This dish has many names and aliases but in all shapes and forms, it is effortless to make and such a satisfying and inexpensive meal.

Below is a basic recipe which you can switch up with the vegetables you have in the fridge or leftover meats such as chicken or ham.

Frittata with chicken and potatoes

Ingredients:

  • 1 Onion chopped finely
  • 1 tbsp Butter
  • 1/2 cup shredded leftover roast chicken
  • 3/4 cup Flour (Plain)
  • 1 cup Vegetables grated carrot and zucchini, corn, chopped capsicum and leftover potatoes – anything you like!
  • 2 cups Milk
  • 4 Eggs
  • 2 tbsp fresh or dried herbs such as basil or oregano
  • 1/2 cup Cheese grated

Method:

Preheat oven to 180 degrees. Place butter in frying pan and add diced onion stir until browned. Add the onion and chicken to the flour and stir through the grated/chopped vegetables and herbs.

Whisk eggs and milk together, mix together with flour and veggie mix, season if desired. Pour into a greased pie dish and top with cheese.

Bake until golden and set (about 30 minutes). Serve hot.

Serve hot or cold with relish and a side salad.
