The perfect plate to bring to a party when you don’t have time to make anything. This is so simple and literally takes minutes to make. Also, you get brownie points for bringing something green.
Ingredients:
- 125 fresh spinach
- 60 g firm feta cheese, coarsely crumbled
- 1 cloves garlic, pressed
- black pepper
- Small dash nutmeg
- 1 1/2 sheets of puff pastry
- Optional – 2 rashers of bacon cooked and chopped
Preheat the oven to 200 C.
Wilt the spinach in a pan by placing it on a medium element and cooking it gently. Then in a bowl, mix the spinach, feta, garlic, pepper, and nutmeg together.
Cut the pastry into 2-inch squares. Make sure the squares are well-floured then stack them in a little pile.
Press a circle into the centre of each square and fill with the spinach mixture. Sprinkle bacon on top.
Place finished pockets on a baking tray and bake about 15 minutes until golden brown and puffy. Serve warm.
