If carrots help your vision, then it’s easy to see this soup is an excellent choice!
Ingredients:
- 2 tsp olive oil
- 450g carrots
- 1 medium chopped onion
- 3 cups (750ml) chicken broth
- 1 tbs chopped fresh dill
- 1/4 orange juice or water
- 1 tbsp honey (optional)
Method:
- Heat oil in large saucepan on medium. Add carrot and onion. Cook for about 10 minutes, stirring occasionally until onion is softened.
- Add next 3 ingredients. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, for about 5 minutes until carrot is tender. Carefully process with hand blender until smooth.
- Add the honey if you like it a bit sweeter and enjoy.
