Quick Carrot Soup

Carrot Soup

If carrots help your vision, then it’s easy to see this soup is an excellent choice!

Ingredients:

  • 2 tsp olive oil
  • 450g carrots
  • 1 medium chopped onion
  • 3 cups (750ml) chicken broth
  • 1 tbs chopped fresh dill
  • 1/4 orange juice or water
  • 1 tbsp honey (optional)

Method:

  1. Heat oil in large saucepan on medium. Add carrot and onion. Cook for about 10 minutes, stirring occasionally until onion is softened.
  2. Add next 3 ingredients. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, for about 5 minutes until carrot is tender. Carefully process with hand blender until smooth.
  3. Add the honey if you like it a bit sweeter and enjoy.
