These overnight oats are beautiful to look at (I love eating beautiful food that is also delicious). If you wake up and feel like having warm oats instead, add a little more milk or water and microwave for 40 seconds.
Ingredients:
- 1/2 cup rolled oats
- 1 tbs chia seeds
- 1/2-3/4 cup milk of your choice (almond, or coconut work well)
- 3/4 tsp almond or vanilla extract
- 1 tbs almond butter, optional
- 1 cup frozen mixed berries, thawed slightly (we made individual blueberry, boysenberry, and raspberry pots)
- honey to sweeten, if desired
Method:
Before bed – Mix everything together in a jar (or another container.) Cover it and stick it in the fridge.
When you wake up the overnight oats will be nice and thick!
Give it another good stir and top with more berries or shredded coconut and almonds for some texture.
