Mixed berry clafoutis

Desserts don’t need to be tricky to make to be impressive, nor do they need to be synonymous with guilt. This take on a French classic is a recipe to add to your recipe repertoire that you’ll use again and again especially in the summer bbq months.

We used berries in this recipe however you could also do it with finely sliced stone fruit or apples.

Ingredients:

  • Clafoutis with cherries , blueberries and berries400g berries of your choice we used a mix
  • Zest and juice ½ lemon
  • 1 tsp honey
  • 1/2 cup + 2 tbs flour
  • 1/3 cup caster sugar
  • 3 large eggs, beaten
  • 1 cup milk
  • Icing sugar, to dust

Method:

Preheat the oven to 180°C. Lightly grease a 25cm round baking dish and tip the berries into the base. Scatter over the lemon zest and juice, and drizzle over the honey.

Sift the flour and caster sugar into a bowl. Form a well in the centre of the mixture and add the eggs. Gradually draw the flour into the eggs from the outside of the well, mixing well, then beat in milk a little at a time to form a smooth batter.

Pour the batter over the blueberries and bake for 35-40 minutes, until golden and puffed up. Serve warm, or cool and dusted with icing sugar.
