Ginger Fudge

Every now and again, a sweet treat is just what you need. Special occasions, gifts or entertaining often call for something a wee bit wicked, and for ginger lovers, this ginger fudge will surely hit the spot.

Ingredients:

  • 2 cups sugar
  • 1/2 cup milk
  • 50g butter
  • 1/2-1 tsp ground ginger
  • 1 tbsp golden syrup
  • 1/2 tsp vanilla essence
  • 2-4 tbsp chopped walnuts

Method:

  1. Measure the sugar, milk and butter into a medium-sized pot. Add the ginger and golden syrup.
  2. Heat, without stirring, over a medium heat until the mixture boils.
  3. Continue to boil gently, stirring frequently to prevent the mixture catching on the bottom, until it reaches soft-ball stage (118C on a sugar thermometer).
  4. Remove from heat and leave to stand until the pot is cool enough to touch, then add the vanilla and chopped nuts.
  5. Beat with a rubber scraper or wooden spoon until the fudge shows signs of thickening.
  6. Before it sets firm, spoon into a greased or non-stick 20cm square tin and swirl the top with a knife. Cut into squares once it is firm.
