A grown-up version of a fruit salad. This is refreshingly simple to make and is an excellent starter or as a main meal paired with grilled chicken or fresh fish.
Serves 2
Ingredients:
- 1/2 cucumber
- 1 pear
- ½ avocado
- Chopped almonds to sprinkle on top
- 1 tsp honey or maple syrup (optional)
- 2 tsp water
- 2 tsp tahini
- 1 tsp lemon juice
Method:
Peel and cube the cucumber, pear and avocado into 1.5cm pieces.
In a small bowl, combine the honey if using, water, tahini and juice from ½ lemon until smooth.
Drizzle over the cucumber, pear and avocado and toss to combine. Top with the almonds.
Season with pepper to taste and serve.
