I am sure most of you have enjoyed a muffin at some point. When I had a café years ago muffins were my biggest seller.
I still enjoy making muffins for my families’ lunches and last week I made a really yummy one I thought I might like to share with you. You can use any fruit you wish.
- 2 cups of flour
- 1 large teaspoon of baking powder
- 1 cup of sugar
- 1 carton of yoghurt (any flavour works)
- 1 egg
- 1 nob (2 teaspoons of softened butter)
- 1/2 cup blueberries or any other fruit
- Milk to mix.
Method:
- Mix all ingredients in a large bowl and spoon into a muffin tray – this makes around 10 good sized muffins.
- Bake 10 mins at 200C (I use fan bake).
- While muffins are cooling either make a caramel sauce or buy a tin of ready-made caramel.
- Take the muffins out and make a hole in the top of each one and drop in a good teaspoon of caramel mixture.
- Bake for 10 to 12 mins more or until golden.
These are ever so yummy. I do hope you enjoy making them. I used blueberries when I made them last, but I think I might try stewed apple next time.

Hi nannaa,
I tried putting the caramel in with the mixture but as it was fairly heavy it ended up going to the bottom of the muffin when cooked. If you take them out of the oven half way through cooking make a small hole then add the caramel it stays in the middle.
