Biscuit fudge, crunchy, chocolatey and delicious.
Ingredients
- 1/2 cup sugar
- 125 gm butter
- 1 dessertspoon cocoa
- 1 egg
- One packet of wine biscuits (or malt biscuits are nice also)
Method
Place sugar, butter and cocoa into a saucepan and slowly bring to the boil.
Beat the egg then swiftly add it to the hot mixture.
Boil a further 2 minutes, then take off the heat.
Crush the biscuits and add to the fudge mixture.
Spread into a sponge roll tin which has been buttered or lined with baking paper.
Allow to cool, then ice with chocolate icing. Sprinkle coconut or chopped nuts on top if desired.

Been making this 60 years as oven not involved for children.
Reduce sugar to 1/3 cup
1 pkt ea round wine and malt smashed with rolling pin inside two bread bags.
Kids love this bit of process, making sure no pcs bigger 20c pce
1 full cup chopped walnuts,(reduces sweetness)
2 eggs
250mm butter
1 tbsp cocoa
Melt sugar butter cocoa over low heat stirring or micrawave covered with paper towel, add over biscuit and nut mix then beaten eggs, ensuring every crumb is wet.
Press into swiss roll tin using back of a fork and cannot stress enough how this will firm up later, dont need to grease or line, make sure cnrs and edges very well pressed as will ease cutting into squares later. Place in fridge hour then ice. Using orange juice in cocoa icing mix is yummy.
I use further walnuts for topping but sometimes kids not keen, so coconut or 1oos and 1ooos are fine.
