An alternative salad to bring to your next bbq, it also makes great left overs with an egg the following day. Alternatively, you can thread the sprouts and bacon on skewers and chuck on the barbie.
Ingredients:
- 13 slices streaky bacon
- 400 g brussel sprouts
- 1 tsp olive oil
- 1 tbsp parmesan, grated
Method:
Preheat oven to 200 C.
In a medium mixing bowl, toss the brussels sprouts with the olive oil. Spread evenly on a large baking sheet. Season, to taste, with salt and pepper.
Place the baking tray in the oven on the middle rack. Roast for 20 – 25 minutes, stirring halfway through.
While the brussels sprouts are roasting, cook and crumble the bacon.
Toss the parmesan with the cooked brussels sprouts and the crumbled bacon. Serve immediately.
