Bacon and Tomato Casserole

Easy, cheap and cheerful this bacon and tomato casserole is the prefect midweek meal.

Ingredients:

  • 180g Spaghetti or Macaroni
  • 6 rashers Bacon
  • 8 large ripe Tomatoes
  • 1 medium Onion
  • 1 chopped garlic clove
  • Herbs
  • 30g Butter
  • 1 teaspoon Cornflour
  • Salt and Pepper
  • pinch Sugar
  • Grated Cheese

Method:

  1. Cook pasta and make tomato sauce as follows: Cut up tomatoes and crush them with a wooden spoon in a thick saucepan. Add the finely sliced onion, garlic and herbs. Simmer gently for 10 minutes until soft. Sieve this puree.
  2. Mix the cornflour with the melted butter, add to the puree return to pan and simmer for 15 minutes. Season with the salt and pepper.
  3. Now fry the diced bacon until just crisp. Mix together the sauce, fried bacon and cooked pasta and place in a macaroni dish. Sprinkle grated cheese on top and heat through in the oven for 5-10 minutes.
