Easy, cheap and cheerful this bacon and tomato casserole is the prefect midweek meal.
Ingredients:
- 180g Spaghetti or Macaroni
- 6 rashers Bacon
- 8 large ripe Tomatoes
- 1 medium Onion
- 1 chopped garlic clove
- Herbs
- 30g Butter
- 1 teaspoon Cornflour
- Salt and Pepper
- pinch Sugar
- Grated Cheese
Method:
- Cook pasta and make tomato sauce as follows: Cut up tomatoes and crush them with a wooden spoon in a thick saucepan. Add the finely sliced onion, garlic and herbs. Simmer gently for 10 minutes until soft. Sieve this puree.
- Mix the cornflour with the melted butter, add to the puree return to pan and simmer for 15 minutes. Season with the salt and pepper.
- Now fry the diced bacon until just crisp. Mix together the sauce, fried bacon and cooked pasta and place in a macaroni dish. Sprinkle grated cheese on top and heat through in the oven for 5-10 minutes.
