Quick, simple to make and a crowd pleaser, afghans are the perfect treat to make whether you’ve got friends coming over, you need to bring a plate or fill the tins.
Biscuits
- 200g butter, at room temperature
- 1/2 cup sugar
- 1 1/4 cups plain flour
- 1/4 cup cocoa
- 2 cups cornflakes
Icing
- 1 tbs butter
- 3 tbs hot water
- 1 tbs cocoa
- 2 cups icing sugar
- Optional walnuts to decorate
Method:
Cream butter and sugar until light and fluffy then sift in the flour and cocoa
Fold in cornflakes.
Spoon mounds of mixture onto a greased oven tray gently pressing together.
Bake at 180C for 15 minutes or until lightly browned and firm.
For the icing mix all ingredients together adding more water if needed, when the afghans are cold ice and decorate with a walnut piece if you like.
