A golden frittata full of spicy sausage and colourful vegetables.
Serves 4
Ingredients:
- 4 chorizo or hot Italian sausages chopped
- 1 large chopped green pepper
- 1 garlic clove, minced
- 8 large eggs
- 1/2 cup ricotta cheese
- Salt and pepper to taste
- 1 small tomato, sliced
- 1/4 cups grated Parmesan cheese
- 1/4 cup grated cheese
If the sausages aren’t pre-cooked cook them in a large non-stick frying pan on medium-high for about 5 minutes, stirring occasionally, until browned. Remove to small bowl.
Add green pepper and garlic to the pan and cook for 2 to 3 minutes, stirring often, until green pepper is softened. Reduce heat to medium-low. Add sausage. Stir. Spread sausage mixture evenly in bottom of frying pan.
Beat next 4 ingredients with a whisk in medium bowl until well combined. Pour over sausage mixture. Reduce heat to low. Cover. Cook for about 5 minutes until bottom is golden and top is almost set. Remove from heat.
Arrange tomato slices evenly around edge of frittata. Sprinkle both of the cheeses over top. Grill for 3 to 4 minutes until frittata is browned and set (see Note).
Note: To avoid damaging frying pan handle in the oven, wrap handle with foil before placing under broiler.
