Great for bbqs, picnics and to keep in the fridge for when you need an easy snack fast.
Ingredients:
- 3 cups of chopped broccoli
- 6 slices of bacon (optional)
- ½ cup panko bread crumbs
- 2 tbsp white flour
- ⅔ cup grated cheese
- 2 tbs finely grated parmesan cheese
- 1 egg
- 1 tbsp flax seeds
- 2 tbsp water
- salt & pepper
Method:
Preheat oven to 180 C, spray a 24 mini muffin pan.
If you’re using bascon cook until crisp when its had a chance to cool slightly chop it roughly into small pieces. Mix all ingredients together in a bowl.
Using a spoon fill a 24 sprayed mini muffin pan with mixture, pat down a bit with your spoon.
Bake in oven for 15 minutes, then turn over and bake another 10 minutes. Serve with your favorite dip or chutney.
