These are great as a starter or as a light snack or you can have a couple as a quick dinner served with some crusty bread and a side salad.
Ingredients:
- 12 large mushrooms
- 60g quick cooking rolled oats
- 60g breadcrumbs
- 60g butter
- salt and pepper to taste
- 2 tsp mixed herb
- 4 tbs stock or water
- grated cheese (optional)
Method:
Peel the mushrooms, remove and reserve stalks.
Chop up the stalks and fry them with the breadcrumbs in a little butter in the until golden-brown, add the oats and the seasoning and mixed herbs.
Moisten with stock/water.
Place this mixture onto the mushrooms, add a sprinkling of grated cheese if you like and bake in a moderately hot oven (around 180C) for about 20 minutes until the mushrooms are tender.
Enjoy.

Have tried this,delicious indeed..Went one step further myself & out of this world i think describes it best..Bake the camembert first,put a few slits in it & place garlic slivers in the slits,place in a dish that holds the whole cheese,place a couple sticks of rosemary around the sides & pour some reisling or chardonay dryish type white wine over & bake @ 160 4 about 10 min.Remove from oven & cool in fridge..Then do the mushroom thing absolutely devine..
