Just five minutes is needed to whip up these thick, chewy and dense paleo cookies. Refined sugar free, gluten free, dairy free and vegan too.
You can whip up several small balls or make one giant man size cookie, you choose!
Ingredients:
- 3 tbsp coconut flour, sifted
- 1 tbsp almond flour (can sub for an extra tbsp coconut flour)
- pinch cinnamon
- pinch sea salt
- 2 tbsp nut butter of choice (I used crunchy almond butter)
- 1 tbsp honey
- 1-2 tbsp mix ins of choice (i.e cashew nuts, dark chips or almonds)
- 1/4 cup almond milk
Method:
In a large mixing bowl, combine the flours, cinnamon and sea salt. Mix well.
Add in the nut butter of choice and honey and mix until a thick, crumbly mixture remains. Add your mix ins of choice. Using a tablespoon at a time, at your your almond milk until a very thick batter is formed.
Using your hands, form into several small balls. Eat as it is or flatten with a fork and refrigerate for 20-30 minutes for firm biscuits.
