Beans are wholesome, delicious and perfect for a weekend meal. These are something special if you are a baked bean fan. Serve with a proper loaf of warm bread – there’s plenty in this recipe, but there needs to be – seconds are almost compulsory!
You will need:
- 1 tbsp olive oil
- 1 onion, finely sliced
- 4 garlic cloves, crushed
- 2 tbsp thyme leaves
- 2 cans chopped tomatoes
- 1 tbsp brown sugar
- 2 tsp smoked paprika
- 2 tbsp Worcestershire sauce
- 500g bacon bones
- 3 cups chicken stock
- 2 cans butter beans, drained
- grated parmesan, to serve
Method:
Heat the oil in a large casserole or heavy-bottomed pan. Add the onion, garlic, and thyme. Cook until the onions are tender, then add the tomatoes, brown sugar, paprika, Worcestershire, bacon bones, and stock and bring to the boil.
Reduce the heat and simmer until the sauce thickens and bacon is tender (60-80 minutes). Add the beans and season with salt and pepper. Cook for another 10 minutes. Sprinkle with parmesan and serve.
