The happiest of frozen delights, this bright and invigorating frozen yoghurt makes a wonderfully light dessert to eat. Fresh mint from the garden adds an unexpected herbaceous note, while chunks of dark chocolate make it luxuriously delicious.
This recipe comes from Homemade by Eleanor Ozich, a book full of clever eco-conscious recipes for daily household goods –all very easy to make at home.
Use commercial full-fat yoghurt or coconut milk if you must but why not make them yourself? There is an easy recipe for making them in her book.
Ingredients
Serves 4–6
1 cup natural or coconut yoghurt
1 cup coconut cream
1/2 cup good-quality dark chocolate, finely sliced
1/4 cup runny honey
1 large handful of finely chopped mint
Directions
Place all the ingredients in a bowl and mix gently to combine.
Tip the mixture into a container lined with baking paper, then place the lid on top. Freeze overnight, or for at least 8 hours.
Allow to soften for 5–10 minutes before serving.
