I love a good chocolate pudding, but sometimes I can’t wait for the oven to preheat. This easy recipe is a great way to satisfy your chocolate craving – in a hurry.
The trick to making chocolate pudding in the microwave is to measure out and mix all the ingredients just as carefully as you would if you were cooking it in the oven. No shortcuts!
You can also cook this in individual portions, using a mug.
Ingredients
Pudding
3/4 cup white sugar
1 Tbsp butter
1 cup flour, sifted
1 Tbsp cocoa powder
1/2 cup milk
1 tsp baking powder
Sauce
1 cup brown sugar
1 Tbsp cocoa powder
1 1/2 cups boiled water
1 tsp vanilla essence
Directions
In a large bowl, cream the sugar and butter. Sift in the flour and cocoa powder. Mix thoroughly. Spoon the mixture to a microwave safe bowl.
Sift the cocoa powder into a separate bowl. Stir in the brown sugar. Sprinkle this mixture evenly over the pudding batter.
Combine the boiled water and vanilla essence in the now-empty bowl. Carefully pour over the batter, using an upside-down spoon to control the pour.
Microwave on high for 10 minutes. Test the pudding using a skewer to see if it’s cooked the whole way through.
