Macadamia Blondie Slice

Macadamia nuts, with their rich nutrient profile and numerous health benefits, are an excellent addition to any diet. Native to Australia, but now grown worldwide, these nuts are high in healthy fats, fibre, and antioxidants, which contribute to heart health, weight management, and blood sugar control. Their subtle, butter-like flavour and creamy texture make them a delightful ingredient in various recipes, including this delicious macadamia slice!

Macadamia Blondie Slice

Ingredients

  • 220g white cooking chocolate chopped or buttons
  • 100g butter
  • 1 cup caster sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 2 Tbsp milk
  • ¾ cup chopped, raw macadamia nuts
  • icing sugar for dusting

Method

Preheat oven to 160 degrees Celcius

Line the base of 17cm x 27cm (or equivalent) cake tin with baking paper.

Place chocolate and butter in a small saucepan over low heat and stir until smooth.

Mix to combine sugar, eggs, flour, baking powder, milk, and macadamia nuts with the chocolate mixture.

Pour the chocolate mixture into the prepared tin and bake for 40 minutes, or until set.

Cool in the tin, remove, dust over icing sugar and cut into rectangles to serve.

Makes at least 12.

Tip: It is recommend to use raw rather than toasted nuts.
