Who doesn’t love a good chip? The humble potato is the traditional vegetable of choice for chips, but you can add to your 5+ a day count by using other vegetables instead.
A mandolin or slicing attachment on a food processor makes easy work of the preparation.
Otherwise all you need is a splash of olive oil, a sprinkle of sea salt and a hot oven.
Try the following as chips:
– Beetroot – earthly, detoxifying and delicious, beetroot ‘chips’ beautifully (but remember your apron when you are slicing them!)
– Kumara – sweet, low GI and extremely satisfying, kumara is an easy alternative to potato
– Kale/Cavalo Nero – add a superfood to your diet – these dark green veges are so tasty and crisp up in a matter of moments
– Parsnip – creamy, nutty and wonderful, there’s nothing like a parsnip chip
– Fennel – it may not crisp quite as well, but finely sliced, roasted fennel is truly more-ish
– Yams – These look amazing on a plate when ‘chipped’ and are a nice change to a mashed or roasted option
– Carrots – Like parsnips, carrots are wonderful as chips, you may like to sprinkle a touch of cayenne pepper over them to create a party in your mouth!
