Ham frittata

A frittata is an Italian-style omelette. It can be served in many ways: hot with a fresh green salad or cold for a picnic or in a lunchbox. You can also serve Frittata in thin wedges as a starter.

  • 2 tablespoons canola oil
  • 1 onion, finely chopped
  • 1 cup small broccoli florets, optional
  • 2 cloves garlic, crushed
  • 1 tablespoon Dijon mustard
  • 8 eggs
  • salt and freshly ground black pepper to season
  • 2 cups diced cooked potatoes (about 2 large potatoes)
  • 4 slices ham, diced
  • 1 1⁄2 cups grated tasty cheddar cheese

Method:

Heat the oil in a heavy-based frying pan with a heatproof handle. Cook onion, broccoli, garlic and mustard over a medium heat for 5 minutes.

Lightly beat the eggs with salt and pepper.

Add the potatoes and ham to the pan and stir. Spread evenly over the base of the pan. Turn the heat down to low. Pour the beaten eggs evenly over the vegetable and ham mixture. Sprinkle with cheese.

Cook for about 8 minutes until the frittata is half cooked. Meanwhile, preheat the oven grill.

Place the frittata under the grill for 3–4 minutes until set and golden. Leave in the pan for 5 minutes before cutting it into wedges. Serve warm or at room temperature with a green salad.
