Ingredients
• 200 grams fettuccine pasta
• 2 tablespoons olive oil
• ½ large onion, finely chopped
• 1 clove garlic crushed
• 1/2 cup chopped ham off the bone
• 1 tablespoon whole grain mustard
• ½ cup grated cheese
• 2 tablespoons grated parmesan cheese
• ½ cup cream
• 1 egg
• Handful Italian Parsley
Method
- Bring a large pot of salted water to boil
- Cook fettuccine until al dente
- While the pasta is cooking, heat olive oil and fry the onion and garlic until tender, then remove from pan.
- Turn up the heat and fry chopped ham until crispy
- Mix cream, mustard, cheese, parsley and egg together in a bowl with a fork.
- Drain the pasta once cooked and place back in the pot with 1 tablespoon of olive oil to prevent the pasta sticking together.
- Over a low heat, stir the cream mixture, cooked garlic, onion and ham through the pasta for 1 minute.
- Season with salt & pepper and garnish with parsley.
