Creamy Ham & Mustard Fettuccine

Ingredients

• 200 grams fettuccine pasta
• 2 tablespoons olive oil
• ½ large onion, finely chopped
• 1 clove garlic crushed
• 1/2 cup chopped ham off the bone
• 1 tablespoon whole grain mustard
• ½ cup grated cheese
• 2 tablespoons grated parmesan cheese
• ½ cup cream
• 1 egg
• Handful Italian Parsley

Method

  1. Bring a large pot of salted water to boil
  2. Cook fettuccine until al dente
  3. While the pasta is cooking, heat olive oil and fry the onion and garlic until tender, then remove from pan.
  4. Turn up the heat and fry chopped ham until crispy
  5. Mix cream, mustard, cheese, parsley and egg together in a bowl with a fork.
  6. Drain the pasta once cooked and place back in the pot with 1 tablespoon of olive oil to prevent the pasta sticking together.
  7. Over a low heat, stir the cream mixture, cooked garlic, onion and ham through the pasta for 1 minute.
  8. Season with salt & pepper and garnish with parsley.
