Make the most of versatile pears with this delightful pear tart. Caramelising the pears gives the dish another element and a dollop of ice cream or cream finishes it off nicely.

Ingredients:
• 2 Pears
• 4 heaped tablespoons brown sugar
• 50g butter
• 1 tablespoon golden syrup
• 1 teaspoon grated fresh ginger
• 2 x sheets puff pastry
Method:
• Peel and thinly slice pears
• Place butter, brown sugar and golden syrup in pan and stir over medium heat until butter has melted and sugar dissolved
• Add to the pan pears and ginger and simmer until pears are tender.
• Heat oven to 200 degrees
• Using a large muffin tray, cut out six circles of puff pastry and place in well greased tin.
• Divide pears (keep liquid in pan) evenly amongst 6 pastry cases and fold in pastry over outside of pears to make a small crust leaving majority of filling uncovered.
• Bake tarts for 20 minutes until golden brown.
• Simmer remaining liquid in pan until it has reduced by half to make a caramel sauce.
• Drizzle caramel sauce over warm tarts and serve with ice-cream.
