Ingredients:
2 eggs
1/4 cup sugar
1/2 cup milk
3/4 cup pancake mix (3/4 cup flour, 1/4 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp sugar, tiny pinch of salt)
Method:
Separate the eggs and put the whites aside, whisk together the first four items adding one at a time and whisking afterwards.
Whip the egg whites until they form soft white peaks then fold into the mixture.
Put a nonstick frying pan on low and place ring molds in the pan add about 1/4 cup of the mixture to each mold. Cover and cook for 10 minutes. Flip then cover again for 5 minutes.
Serve with your favourite toppings.
