Who doesn’t love chilli con carne? Rich, thick and as flavorful as it is colourful, this easy one-pot chilli is delicious, feeds a crowd and freezes extremely well.
Serves: 4 servings
Ingredients:
- 450g mince
- 1 red pepper, diced
- 1 large onion, diced
- 2 large garlic cloves, minced
- 1 tsp ground chilli pepper
- 1 tsp curry powder
- 1 tsp red chilli pepper flakes (optional)
- 2 teaspoons of salt
- 1 can red kidney beans
- 1 can of sweet corn kernels
- 1 can chopped tomatoes
- 1 1/2 cups of stock (chicken, vegetable or beef)
Method:
In a large pot, heat up a little oil and brown the ground meat until just cooked. Set aside.

In the same pot, heat up a little more oil and cook the diced pepper and onions, until onions are translucent.
Add the minced garlic and let cook for around 30 seconds before adding in ground chilli pepper, curry powder, red chilli pepper flakes and salt and mix well to ensure vegetables are all coated with the seasoning
Pour in the stock and let simmer over medium-low heat for 30 minutes
Add in the browned minced meat, tomatoes, beans and corn and stir well, letting it simmer for another 20 minutes, or until chilli is no longer soupy and has a thick consistency.
Serve chilli hot garnished with rice or corn tortilla chips.
