Is there anything more indulgent than caramel slice? It takes a little while to prepare, however it is well worth it and is always well received amongst guests.
Ingredients:
Base
- 200g butter
- 2 cups brown sugar
- 2 eggs
- ½ cup cocoa powder
- 1 tsp vanilla essence
- 1 ½ cups plain flour
Caramel
- 180g butter
- ½ cup white sugar
- 2tsp golden syrup
- 1 can condensed milk
Chocolate top
- 1 ½ cups dark chocolate
- 1 tsp coconut oil
Method:
Preheat oven to 170C.
Base: Melt the butter, cocoa, sugar and vanilla together and cool beat in the egg before folding in the flour.
Press into a lined 21c x 28cm tray and bake for 15 minutes. Allow to cool.
Caramel: Place the ingredients in a pot and cook over a low heat stirring constantly until it becomes golden and thick.
Spread the caramel over the cooled base.
Chocolate top: Melt the chocolate and oil over a low heat then pour over the caramel. If you like you can add a drizzle of white chocolate or sprinkle finely chopped nuts over top.
Once it is completely cooled you can chop it up using a hot knife. Store in the fridge and enjoy.
