This spinach pasta recipe is so delicious and easy! Full of vitamins, and protein, its a greta way to get everyone eating their greens. The green sauce is also great served on a platter with plenty of crackers and cheese.
Serves: 4
- 450 g pasta
- ¼ cup walnuts
- 2 cloves garlic
- 3 cups of spinach lightly blanched
- ⅓ cup olive oil
- ¼ cup grated Parmesan
- ¼ tsp of each salt and black pepper
- 1 tablespoon grated lemon zest
Instructions
- Cook the pasta al dente
- Drain and return it to the pot.
- In a food processor or blender, pulse the walnuts and garlic until chopped.
- Add the spinach, oil, Parmesan and salt and pepper.
- Puree until smooth
- Add the pesto to the pasta and toss to combine, add extra olive oil if dry
Sprinkle with the lemon zest and Parmesan before serving.
