A simple loaf which will not only help you get in your greens, it is full of protein from the eggs so will keep you fuller for longer. I like to serve it with a bit of cream cheese, smoked salmon and a slice of tomato for an easy and delicious lunch.
Ingredients:
375g zucchini, coarsely grated- 3 rashers bacon, finely chopped (optional)
- 1 large onion, finely chopped
- 1 cup self-raising flour
- 5 eggs, lightly beaten
- 1 cup grated cheese
- 1/4 cup oil
- sliced tomato, to serve
- sliced smoked salmon or ham, to serve
- Cream cheese, to serve
Method:
Preheat oven to 200°C or 180°C fan-forced. Lightly grease a 14 x 21cm loaf pan. Line base and two long sides with baking paper.
Combine all ingredients in a bowl and season to taste. Spoon into prepared pan and top with tomato slices. Bake 40 minutes, until a skewer inserted comes out clean. Stand in pan 5 minutes and turn out onto a wire rack to cool slightly. Serve warm or cooled with smoked salmon or ham.
