What’s for dinner? Creamy mussels

Mussels are a fantastic form of protein and are fast to prepare. Try out our mussel pot tonight for a tasty and nutritious meal.

Heat the oil in a large pan and gently fry the leek, curry paste and garlic for a couple of minutes. Add everything else except the mussels and stir until simmering.

Add the mussels and cook until they open (discard any that stay closed).

Serve in a pot with the sauce, a sprinkle of fresh basil, some crusty bread, and a salad.
