It features more than 60 recipes for teas, aperitifs, cocktails and non-alcoholic drinks, along with some great tips – did you know that if the head on your beer disappears entirely, that there is likely to be soap residue in your glass?

Here are a couple of recipes to get you going:
Cocoa Tea (St Lucia)
This is a ‘like momma used to make’ breakfast drink, which combines all the exotic aromas of chai tea in Asia, with a chocolatey twist.
- 480ml water
- 1 bay leaf
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 100g cocoa
- 240ml milk
- sugar
- 1 tbsp cornflour
- 1/2 tsp vanilla
Boil the water with the bay leaf, cinnamon and nutmeg, let it simmer for 15 mins.
Grate the cocoa into boiling water and boil for 10 minutes.
Add the milk and sweeten to taste, or add cream.
Mix the cornstarch with water and mix into boiling mixture, stirring constantly.
Paloma
Here’s a refreshing Mexican drink – it’s actually more popular in Mexico than a margarita with locals!
- 1 lime
- salt
- ice
- 60ml tequila (preferably blanco)
- 30 ml grapefruit juice
- 30 ml soda
- sugar syrup or honey to taste
Run a lime wedge around the top of a chilled glass and dip in salt.
Add ice, tequila, grapefruit and soda. Adjust to taste with sugar syrup or honey.
Gently stir and garnish with lime.
