You will need:
3 tbsp olive oil
1 diced onion
5 cloves of garlic, crushed
3 cans of tomatoes in juice
2 cups of chicken stock
175g pesto
1 tbsp sugar
1 bay leaf
1/4 tsp fresh thyme, chopped
salt and pepper
Method:
Heat the olive oil and saute the onion until clear. Add the garlic and cook for a further minute. Add the remaining ingredients and season well with salt and pepper. Cover and simmer for 30 minutes. Cool slightly and puree.
Enjoy with warm fresh bread.
