A great tomato soup is a wonderful lunch or dinner, no matter what the season. This recipe is packed with goodness and flavour – and as a bonus, it’s incredibly easy!
- 3 tbsp olive oil
- 1 diced onion
- 5 cloves of garlic, crushed
- 3 cans of tomatoes in juice
- 2 cups of chicken stock
- 175g pesto
- 1 tbsp sugar
- 1 bay leaf
- 1/4 tsp fresh thyme, chopped
- salt and pepper
Method:
Heat the olive oil and saute the onion until clear.
Add the garlic and cook for a further minute.
Add the remaining ingredients and season well with salt and pepper. Cover and simmer for 30 minutes.
Cool slightly and puree.
Enjoy with warm fresh bread.
