The ultimate clean meal which doesn’t skimp on flavour. White fish is full of omega 3 which with the aid of turmeric help to fight inflammation and take care of every cell in your body.
Serves 4
Ingredients:
- 1 tbsp grated ginger
- 1 tbsp turmeric
- 2 garlic cloves, smashed
- 1 tbsp soy sauce
- 1 lime, juiced
- 2 tbsp olive oil
- 1 coriander bunch, leaves and stalk finely chopped
- 200 g white fish fillets
- ¼ cup coconut water
- 1 tbsp butter
- 2 courgette diced
Method:
Combine ginger, turmeric, garlic, tamari, lime juice, and olive oil in a mortar and smash ingredients well. Add the coriander and fold it through.
Place fish into a bowl and coat with the turmeric mix then leave to marinate in the fridge for 15 minutes.
Heat a pan over medium heat.
Lay the fish fillets in the pan and pour in the coconut water.
Reduce the heat and pan-steam for 8 minutes, occasionally coating the fish with the marinade. Add in the courgette.
Stir through the butter at the end, to lightly emulsify and make the loveliest sauce.
Serve with salad leaves.
