Satay beef lettuce parcels

This fantastic dish not only tastes great but requires little effort.

As a bonus, since you put your lettuce parcels together as you eat, it’s an activity as much as a meal, which can involve friends and family.

Tip: If you like it hot? Chop and add half a red chilli (without seeds)

Method:

Finely dice onion, garlic, celery and peppers.

Using a wok, heat peanut oil on a medium heat. Cook onion, garlic, celery and peppers until soft then remove from wok.

Turn up heat and brown beef mince.

Turn wok down to medium heat. Add back to the wok the cooked onion, garlic, celery and peppers. Mix through grated carrot.

Stir in soy sauce, sweet chilli sauce and peanut butter, mix until peanut butter has melted.

Turn off heat and mix through coriander.

Serve:

Serve satay beef in bowls with a lemon wedge and extra coriander on top and accompanied by individual lettuce leaves.

Place as much beef as desired in a lettuce leaf, squeeze on lemon juice, and roll lettuce leaf to eat.
