La maniua le vaiaso o le gagana Samoa – or in English, have a happy Samoan Language Week!
Today is the last day of Samoan Language Week. Why not try making this Samoan dish to celebrate? Koko Laisa is often eaten for breakfast and can be quite bitter – but feel free to add as much sugar as you like to sweeten it.
Ingredients:
3 cups of rice
6 cups of water
2 cups of coconut milk or cream
1 cup of sugar
1 cup of Koko Samoan (this is Samoan cocoa, but you can substitute regular cocoa)
Optional – Orange leaf or lemon leaf
Directions:
In a large pot combine the rice an water bring to a boil.
Stir in the coconut cream
Add the sugar
Add the orange leaf (remember its optional)
Add the Koko Samoa
Bring to a boil
Remove the Orange Leaf
Koko Laisa should resemble a thick soup
