These tasty little treats are perfect to snack on. The oats provide fibre which reduces your “bad” cholesterol and pumpkin is filled with natural cancer fighters alpha- and beta- carotene.
Ingredients
2 cups rolled oats
¾ cup cooked pumpkin (mashed)
½ cup roasted slivered almonds
½ cup dried cranberries
1/3 cup unsalted pumpkin seeds
¼ cup maple syrup
2 tablespoons vegetable oil
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon ground cloves
Directions
Preheat oven to 180° c
Line a baking tray with foil and spread oats evenly across tray
Toast until golden brown, about 8-10 minutes
In a large bowl, mix oats, pumpkin almonds, cranberries, pumpkin seeds, maple syrup, spices and oil
Form into balls and arrange on baking tray
Bake 15-18 minutes until lightly browned
